There is something incredibly magical about the food memories from our childhood. If you grew up in the era of community cookbooks, backyard potlucks, and family reunions, you know exactly what I mean. If you look back at the anatomy of a vintage fruit salad, the brilliant foundation almost always relied on three key ingredients: cottage cheese, a tub of whipped topping, and a package of dry Jell-O mix. ( A lot of fluff salad’s also used marshmallows instead of cottage cheese. I do not add marshmallows because I don’t like them).

Depending on what fruit flavor my mom was aiming for, she would mix and match those staples to create pure magic. It sounds simple—and it is—, but there is a reason these recipes have stood the test of time. They are light, airy, and instantly transport you back to simpler times.

When I was brainstorming what flavor profile I was in the mood to create, two specific fruits kept calling my name: apricots and peaches.

After letting it chill in the refrigerator for a few hours to let the flavors marry and the texture set, it was time for the official taste test.

It was incredibly refreshing, wonderfully light, and yes—it absolutely hit the spot. It’s the perfect reminder to slow down and savor the simple, sweet moments (and flavors) of life.

Inspired by the classic fruit "fluff" salads of the past, this easy, no-bake treat marries the sunny flavors of peach and apricot for a refreshing, cloud-like dessert salad that tastes like pure nostalgia.

Ingredients

  • 1 - 15oz can Peach chunks
  • 1 - 12oz container cottage cheese
  • 1 - 3oz package peach Jell-O (dry)
  • 1/2 - Cup apricot preserves (or 1/2-1 Cup chopped fresh apricots)
  • 1 - 8oz tub Whipped Cream

Instructions

  1. Drain peach chunks
  2. Then in large mixing bowl, fold together all ingredients (in no particular order) until combined well.
  3. Chill in fridge for at least 2 hours.

How long does it last? This salad is best enjoyed within 3 to 4 days. Before serving leftovers, give it a very gentle stir with your spatula, as a little bit of liquid may naturally separate at the bottom over time. (Note: Do not freeze this salad, as the texture of the cottage cheese and whipped topping will change completely when thawed).

The Whipped Topping: Substitute the standard whipped cream tub with a plant-based alternative, such as Coco Whip or a dairy-free whipped topping.

The Cottage Cheese: Use your favorite brand of dairy-free cottage cheese (there are some wonderful almond or soy-based options on shelves now), or swap it for a plain, unsweetened dairy-free Greek yogurt to keep that signature tang.

The Gelatin: Standard Jell-O contains gelatin, so for a strictly vegan version, look for a vegan, carrageenan- or agar-agar-based peach gelatin alternative available at most natural food stores.
