If you are looking for a quick, flavorful dish that keeps things light without skimping on taco night flavor, these Low Carb Ground Turkey Taco Bowls are about to become a regular in your meal rotation!

By swapping traditional heavy rice and tortilla shells for a nutrient-packed base of riced cauliflower, you get all the comfort and volume of a classic taco bowl with a fraction of the carbs. Lean ground turkey brings plenty of protein, while fresh avocado slices add healthy fats and a rich, creamy texture. Topped off with diced fresh tomatoes, crisp yellow onion, and a sprinkle of shredded cheddar cheese, every bite is loaded with color, crunch, and bold flavor.

Pro Tip: Don’t limit your taco seasoning to just the turkey! Once your frozen riced cauliflower is cooked, stir a bit of dry taco seasoning right into the cauliflower. It seamlessly blends the base with all your fresh toppings and elevates the flavor profile of the whole bowl.

💡 Tips & Storage Instructions

***
  • Flexible Meal Prep Options: You can assemble all 4 individual taco bowls right after cooking for effortless grab-and-go meals throughout the week. Alternatively, if you prefer assembling fresh, store each prepared ingredient in its own separate container in the fridge and build your bowls as you go!
  • Keep the Avocado Fresh: If you are storing assembled bowls in the fridge for several days, hold off on slicing the avocado ahead of time. Add fresh avocado slices right before serving to keep them from turning brown and soft in the fridge.
  • Warm the Base First: If you stored your ingredients in separate containers, reheat your taco-seasoned turkey and riced cauliflower base first, then top with your cold fresh ingredients (onion, tomatoes, shredded cheddar, and avocado) for the ultimate temperature and texture contrast.
  • Storage Duration: Prepared ingredients or assembled bowls will stay fresh in an airtight container in the refrigerator for 3 to 4 days.

🌮 Level Up Your Bowl: Extra Topping Ideas

***
While this base bowl is packed with flavor, one of the best parts about taco night is making it your own! Here are a few favorite additions to customize your bowl while keeping things light:
  • A Dollop of Creaminess: Add a spoonful of full-fat or low-fat sour cream (or plain Greek yogurt for a protein boost) to cool down the spice and add a rich, tangy texture.
  • Your Favorite Taco Sauce: Drizzle on a splash of mild or hot taco sauce, your favorite red salsa, or a fresh salsa verde to tie all the layers together.
  • Fresh Jalapeños: Toss on thinly sliced raw jalapeños for a crisp crunch, or pickled jalapeños for a zesty, vinegary kick.
Fresh Cilantro & Lime: Sprinkle finely chopped fresh cilantro over the top and add a quick squeeze of fresh lime juice right before eating to brighten up all the flavors.
  • A Hit of Crunch: If you aren’t strictly watching carbs, a small sprinkle of crushed tortilla chips or toasted pepitas (pumpkin seeds) adds a satisfying crunch to every bite.

🥑 Keto-Friendly Options

***
This bowl is naturally very low in carbs, but a few simple tweaks can make it strictly Keto-compliant and boost those healthy fats:
  • Swap Lean Turkey for Ground Beef or Dark Meat Turkey: Choose 80/20 ground beef, 85/15 ground turkey, or ground pork to naturally increase the healthy fat ratio needed for keto macros.
  • Double Up on Healthy Fats: Add a full avocado per serving, a generous drizzle of olive oil or avocado oil over the warm cauliflower rice, or an extra spoonful of full-fat sour cream and shredded cheddar cheese.
  • Watch the Taco Seasoning: Some store-bought taco seasoning packets contain added sugars, cornstarch, or wheat flour as thickeners. Look for a low-carb, sugar-free brand, or whip up a quick homemade blend using chili powder, cumin, garlic powder, onion powder, paprika, and salt.

🌱 Vegan & Plant-Based Options

***
You can easily transform this into a hearty, 100% plant-based meal without sacrificing any of the bold taco flavor:
  • Swap the Ground Turkey:
    • Plant-Based Meat Crumbles: Use your favorite meatless ground swap (such as Beyond Meat, Impossible, or Gardein) cooked with 1 tbsp of taco seasoning.
    • Black Beans or Pinto Beans: Warm a can of rinsed black beans or pinto beans with taco seasoning for a wholesome, fiber-rich protein base.
    • Walnut-Mushroom “Taco Meat”: Finely chop walnuts and cremini mushrooms, then sauté them in a skillet with taco seasoning and tamari/soy sauce for a savory, whole-food alternative.
  • Swap the Cheddar Cheese: Use your favorite shredded vegan cheddar cheese (like Violife, Daiya, or Chao), or sprinkle on 1–2 tablespoons of nutritional yeast for a cheesy, nutty flavor.
  • Dairy-Free Creaminess: Swap traditional sour cream for a dairy-free, plant-based sour cream or a scoop of plain coconut/almond milk yogurt. Fresh avocado and salsa also add plenty of richness without any dairy!
