Oof, friends. Let’s keep it real for a moment—is there anything quite as disruptive as a stubborn, aching tooth? I’ve been dealing with a sore tooth lately, and with my dentist appointment not until the end of June, I’ve had to completely pivot my meal plans. Crunchy snacks and hearty chews are officially on pause, and the mission for the next few weeks is all about soft, comforting, and easy-to-eat dishes.

The catch? I wasn’t actually planning on doing my grocery store run until next week.

Instead of letting a dental roadblock get the best of me, I decided to lean into the challenge, channel some cozy kitchen creativity, and browse my pantry and fridge to see what I could come up with. And honestly? This is where the magic happens.

The Pantry-Dive Masterpiece

With a little imagination and a look at what was already on my shelves, a beautiful, comforting meal began to take shape. I pulled out a couple cans of beans, a can of chicken, some rich chicken broth, and a box of ditalini pasta—those perfect, tiny little tubes that are so wonderful for spoonfuls of soup.

I paired those staples with some diced vegetables and a few other pantry basics to build flavor, letting everything simmer together until it was beautifully rich and velvety.

The result? A creamy chicken and bean soup that is an absolute, soft-food winner. It’s warm, incredibly soothing on a sore mouth, and best of all, it made a giant pot that will easily last me for the next few days. It just goes to show that you don’t need a fancy grocery trip to create something deeply satisfying and nourishing. Sometimes, the best comfort food is already waiting for you right in your cupboards.

Creamy Chicken & Bean Ditalini Soup

  • Large Dutch Oven or Heavy-Bottomed Soup Pot
  • Chef’s Knife & Cutting Board
  • Measuring spoons & Cups
  • Can Opener
  • Wooden Spoon or Silicone Spatula
  • Soup Ladle
  • Blender

Ingredients
  

  • 1 15.5oz Can Chickpeas
  • 2 15.5oz Cans cannellini beans
  • 1 Cup Ditalini pasta (Dry)
  • 1 Yellow Onion Diced
  • 2 Celery Stalks Diced
  • 1 Tbsp Minced garlic
  • 1/2 Cup Grated Italian cheese
  • 1 Cup Heavy whipping cream Room temp
  • 1/2 Stick butter
  • 1 12.5oz Canned chicken breast
  • 4 Cups Chicken broth
  • 1 tsp Parsley

Instructions
 

  • Begin By dicing your onion and celery, and using your can opener open your cans.
  • Next place your can of chickpeas with juice in a blender.
  • Blend until pasty.
  • Next in your Dutch oven or soup pot add the chicken broth, blended chickpeas, both cans cannellini beans, Canned chicken broken up, diced onion & celery, parsley, minced garlic, and dry ditalini pasta
  • Simmer on medium for about 35 minutes.
  • Turn heat down to low.
  • Now add your room temp heavy whipping cream, 1/2 stick of butter and 1/2 cup of grated Italian cheese.
  • Continue on low heat for another 10 minutes so the flavors marry together.

  • The Secret to the Creamy Texture (No-Drain Beans): Do not drain your beans! Using the beans directly in their starch-rich packing juice adds instant body, silkiness, and flavor to the broth.
  • The Power of Chickpeas: Blending the chickpeas acts as a natural, healthy thickener. It creates a velvety, rich base without requiring a heavy flour-and-butter roux, making the soup beautifully smooth and incredibly gentle to eat.
  • Dry Pasta Shortcut: There is no need to dirty a second pot to boil your ditalini. Toss the dry pasta directly into the simmering broth. It will cook to perfect tenderness right in the soup, releasing its own starches to further thicken the liquid.
  • Temperature Matters for the Cream: When it’s time to stir in your heavy whipping cream, make sure it is at room temperature or slightly warmed in the microwave for 10–15 seconds. Cold cream straight from the fridge can shock the hot soup, causing the dairy to curdle or separate.

  • Dairy-Free Option: Swap the heavy whipping cream for full-fat canned coconut milk (it won’t leave a strong coconut flavor once simmered with the broth and veggies) or a dairy-free heavy cream alternative.
  • Vegan Version: To make this entirely plant-based, omit the canned chicken and swap the chicken broth for a rich vegetable broth. Lean into the beans and blended chickpeas as your primary protein source—it stays just as hearty and comforting!
  • Vegetable Boost: You can also add a can of carrots and some canned spinach if you’re going for the full pantry experience. If you have fresh carrots & spinach, by all means, you can use that.

  • In the Fridge: Store any leftover soup in an airtight container in the refrigerator for up to 3 to 4 days.
  • Do Not Freeze! I highly recommend not freezing this soup.  Pasta tends to get mushy and waterlogged when thawed, but more importantly, dairy-based or cream-thickened broths have a tendency to separate and turn grainy upon defrosting. It’s best enjoyed fresh!
