Ingredients

  • 1 - 10oz bag of shredded carrots
  • 2 - Grated apples
  • 1 & 1/2 - Cups raisins
  • 1 - 10oz can crushed pineapple (drained)
  • 1/2 - Cup Mayonnaise
  • 1/2 - Cup Sour cream
  • 3 - Tbsp Buttermilk
  • 1 - Tbsp honey
  • 1/2 - teaspoon cinnamon

Instructions

  1. Grate your apples
  2. In a Dutch oven or large sauce pan bring water to boil then add the shredded carrots and raisins. Boil for 2-3 minutes.
  3. Then place carrots and raisins in a colander and run cold water over it. Drain well squeezing with your hands if necessary.
  4. Place carrots and raisins in a large mixing bowl.
  5. Next add grated apple and crushed drained pineapple.
  6. Now add mayo, sour cream, buttermilk, honey & cinnamon.
  7. Combine well.
  8. Cover and chill in refrigerator for at least 2 hours. (overnight is even better)
