Okay, friends, you are not going to believe the culinary comedy of errors that led to this absolutely delightful salad. Picture this: I’m at the grocery store, feeling all confident and ready to whip up one of my blogging buddy’s super simple 3-ingredient salads (that I’ve made several times). I’m picturing it perfectly in my head, grab the ingredients, and head home, ready to create some magic.
Fast forward to my kitchen counter, where I happily toss everything together. But wait a minute… something tastes… off. “Hey,” I mutter to myself, “this isn’t right at all.” It wasn’t until after I’d assembled my creation and tried it that the lightbulb finally went off. I scurried to my computer, pulled up my friend’s recipe, and promptly burst into laughter.
It turns out that my memory had played a hilarious trick on me. I’d somehow added an ingredient that wasn’t supposed to be there and completely forgotten one of hers! Oops!

Refreshing Watermelon Beet & Feta Salad
A happy kitchen accident led to this surprisingly delicious Watermelon, Beet & Feta Salad! Sweet watermelon, earthy beets, and salty feta come together in a refreshing summer flavor explosion you won’t believe.

Ingredients
Cubed watermelon | |
Canned beets (cubed) | |
Feta crumbles | |
Salt to taste (optional) |
Utensils
- Sharp knives or vegetable chopper
- Airtight container
- Silicone spatula for mixing
- Cutting board
Steps of preparation
- Cut watermelon, discard rind, cut (or use vegetable chopper) into about 1 in cubes.
- Drain canned beets, slice and cut also into about 1 inch cubes.
- Sprinkle feta crumbles onto individual servings.
- Salt to taste (optional)
