Hello Spring! The days are getting longer, YAY! The sun is shining brighter, and my tastebuds are officially craving all things fresh and vibrant. With the leisurely arrival of warmer weather, my taste buds shifted from hearty stews to crisp, cool salads. And that’s precisely what happened today. I found myself longing for a refreshing bite, but the question was: what kind of salad? A quick raid of the fridge, freezer, and pantry revealed the perfect combination: earthy beets, crisp English cucumber, sweet frozen peas, all brought together by a creamy, dreamy cream cheese dill dressing. The result? A Warm Weather Beet Salad that’s as beautiful as it is delicious.

Beet Salad with Creamy Dill Dressing

Enjoy this refreshing Beet Salad featuring beets, crisp cucumber, and sweet peas, all tossed in a creamy dill dressing. The dressing, with its bright notes of dill, chive, and onion, creates a delightful balance of flavors. A perfect spring salad!

Ingredients

  • 8 oz. Whipped cream cheese
  • 1/4 Cup Sour Cream
  • 1/4 Cup Hellman's Mayonnaise
  • 1 English cucumber (finely chopped)
  • 1 15 oz canned small whole beets (drained then finely chopped)
  • 1 12 oz package of frozen microwave steamable peas ( microwave according to package directions)
  • 1/2 Cup Shredded sharp cheddar cheese
  • 1/4 Cup chopped chives
  • 1/4 Cup chopped onion
  • 1/2 Tbsp dill weed
  • 1/2 Tbsp garlic powder
  • 1/2 tsp Mrs. Dash table blend (green top)
  • Salt & Pepper to taste

Instructions

  1. Prepare the Sweet peas according to microwave directions.
  2. While peas are in the microwave finely chop beets, onion, chives, and English cucumber. Set aside.
  3. In a mixing bowl prepare the dressing. Add the cream cheese, mayonnaise, and sour cream.
  4. Next add the dry ingredients to the dressing. Garlic powder, dill weed, and Mrs. dash table blend. Combine.
  5. Next add the sweet peas, chopped beets, cucumber, chives, onion. and cheddar cheese. Combine.
  6. Chill in refrigerator for about 1 hour.
  7. Serve and Enjoy!

You Will Need

  • Sharp Knives or vegetable chopper
  • Mixing bowl and spoon
  • Measuring cups and spoons
  • Airtight storage container to chill prior to serving.
  • Spoons and bowls.
