Equipment

  • 8×8 Metal Baking Pan
  • Parchment Paper
  • Microwave-Safe Bowl
  • Small Mixing Bowl
  • Measuring Cups & Spoons
  • Whisk
  • Heat-Safe Spatula or Wooden Spoon
  • Pastry Brush
  • Clean Kitchen Towel (or Foil)
  • Sharp Knife or Pizza Cutter

Ingredients

  • 2 cups Shredded Cheese Mozzarella, Cheddar or a blend
  • 1 Large egg Beaten
  • 1/4 cup Almond flour
  • 1/2 tsp baking powder Leavening
  • 1/2 tsp garlic powder
  • 1 tsp Italian seasoning
  • 1 tsp dry Ranch seasoning mix Optional
  • 3 Tbsp Dried rehydrated chives, divided (2 tbsp for dough, 1 tbsp reserved for top). Or fresh.
  • 1-2 melted butter (for brushing)

Instructions

  • Prep the Oven & Pan:
Preheat your oven to 350°F (175°C). Line an 8×8 metal baking pan with parchment paper or grease it well with butter or oil.
  • Melt the Cheese:
Place the 2 cups of shredded cheese in a microwave-safe bowl. Microwave in 30-second intervals, stirring between each, until completely melted and smooth (about 60–90 seconds). Let cool for 1–2 minutes so it doesn't cook the egg
  • Mix Dry Ingredients & Seasonings:
In a small bowl, whisk together the 1/4 cup almond flour, 1/2 tsp baking powder, 1/2 tsp garlic powder, 1 tsp Italian seasoning, and 1 tsp dry Ranch dressing mix.
  • Combine the Dough:
Add the whisked dry ingredients, 1 beaten egg, and 2 tablespoons of the rehydrated chives to the melted cheese. Stir and knead vigorously with a spatula or hands until a cohesive, smooth dough forms. (If the cheese hardens, microwave for 10 seconds to soften).
*** If you are using your hands to mix Be Sure The HOT cheese is cooled enough for you to work it with your hands! ***
  • Shape & Dimple:
Transfer the dough to your prepared 8×8 metal pan. With lightly oiled hands or a spatula, press the dough out into an even layer filling the pan. Lightly coat your fingertips with oil or melted butter and press deep dimples all over the surface, almost to the bottom of the pan.
  • Add the Topping:
Generously brush the top of the dough with the melted butter, then evenly sprinkle the remaining 1 tablespoon of rehydrated chives over the top, letting them settle into the dimples.
  • Bake:
Bake at 350°F for 18 to 20 minutes. Look for the center to be set and the top to turn pale golden.
  • Rest Covered for Softness:
Remove from the oven and immediately drape a clean kitchen towel or foil loosely over the pan for 5 minutes. The trapped steam will keep the crust extra soft and tender. Slice into squares and enjoy warm!

Notes

  • Rehydrating the Chives: Be sure to soak your freeze-dried chives in warm water for 3 to 5 minutes and pat them dry before adding them to the dough. This keeps them vibrant and prevents them from drawing moisture out of the bake.
  • Yes: You can use fresh chopped chives too.

  • Working with Cheese Dough: If the melted cheese cools down too quickly and becomes difficult to mix with the almond flour and egg, simply pop the bowl back in the microwave for 10 to 15 seconds to soften it up again.

  • *** If you are using your hands to mix Be Sure The HOT cheese is cooled enough for you to work it with your hands! ***

  • The Secret to Softness: The key to keeping this bake soft rather than crisp is baking at 350°F and draping a clean kitchen towel loosely over the hot pan as soon as it comes out of the oven. The trapped steam gently softens the crust.
  • Dimpling: Don’t be afraid to press your fingertips deep into the dough before baking. Dimpling creates little wells that catch the melted butter and chives, ensuring flavor in every bite.

Storage & Reheating

  • Room Temperature: Store leftover squares in an airtight container at room temperature for up to 2 days.
  • Refrigerator: Keep in a sealed container in the fridge for up to 5 days.
  • Freezer: Wrap individual squares in parchment paper and place them in a freezer-safe zip-top bag. Freeze for up to 2 months. Thaw in the fridge overnight before reheating.
  • How to Reheat (To Keep It Soft):
    • Microwave (Best for Softness): Microwave a square on a paper towel for 10–15 seconds. It will become warm, gooey, and tender immediately.
    • Oven/Toaster Oven: Warm at 325°F covered loosely with foil for 5 minutes until heated through without crisping the top.

Pairs Well With (Meals & Mains)

  • Warm Soups & Stews: Perfect for dipping into a soft bowl of tomato basil soup, low-carb broccoli cheddar, or a cozy Slovak split pea / cabbage soup.
  • Fresh Green Salads: Serves as a tender, flavorful low-carb alternative to garlic croutons alongside a classic Caesar or garden salad.
  • Roasted Meats & Poultry: Excellent served warm alongside roasted chicken, pork loin, or garlic butter steak bites.
  • Breakfast / Brunch: Top a warm square with a poached or fried egg for a savory morning treat.
