Low Carb | Baked Egg Cups
Transform leftover ground turkey into a cozy, low-carb breakfast! These fluffy baked egg cups are packed with juicy grape tomatoes, melted Monterey Jack cheese, and a hint of ranch flavor—baked to perfection in effortless silicone cups.
Ingredients
- 4 large eggs
- 1/2 cup cooked ground turkey (roughly 1 tbsp per cup)
- 4–6 grape tomatoes, halved or quartered
- 1/4 cup shredded Monterey Jack cheese
- 2 tbsp sour cream (whisked in for extra fluffiness and richness)
- 1 tsp dried ranch powder

Instructions
1. Preheat and Prep: Preheat oven to 375°F (190°C).
Set 6 silicone baking cups onto a small baking sheet or inside a muffin pan. Lightly spritz the inside of each cup with nonstick spray.
